Gajar (Carrot) – 5 (Medium sized, Roughly chopped)

Malai (Cream) – 2 Tablespoon

Cheene (Sugar) – Acco. to taste

Doodh (Milk) – Half cup

Desi ghee – 3 Tablespoon

Ilayachee (Cardamom) – 2-3

Dry fruits – According to taste

Method (How to make Gajar Halwa at home)

Jhatpat gajar ka halwa banane ke liye sabse pehle ek cooker me 1 teaspoon ghee le aur isme ek-ek karke sabhi dryfruits roast kar le. Ab inhe ek bowl me nikal le aur isi ghee me ilayachee aur gajar dalkar 2 minute pakaye.

Ab isme doodh aur cheene dalkar, sim gas par 2-3 whistle aane de. Dhyan rahe hame gas ko medium ya full nahi karna hai, kyonki aisa karne se doodh aur cheene jal sakte hai. Ab pressure cooker thanda hone par, Mishran ko ek kadai me transfer kar le.

Kadai me gajar ko thoda-thoda mash kar le aur full gas par iska pani sukhne de. Ab isme 2 tablespoon ghee aur malai add kare aur bhunne de. 

Ek pan me half litre doodh boil kar le aur ubal aane par ise vinegar se phar le. Doodh ka chhaina (paneer) bankar taiyar ho jayega. 

Is paneer ko gajar ke halwe me dale. Ab isme roasted dry fruits aur ek tablespoon ghee add kare aur acche se bhun le. Swadisht gajar ka halwa taiyar hai. Dry fruits dalkar ise garam-garam serve kare. 

Gajar ka Halwa Recipe (Step by Step Photos ke Sath)

Step1. Gajar ka halwa recipe banane ke liye sabse pehle pressure cooker me ghee garam kare aur isme sabhi dry fruits roast karke ek bowl me nikal le.

Ghee me nuts roast kar le aur ek bowl me transfer kar le.

Step2. Ab ghee me roughly chopped gajar aur ilayachee dalkar do minute tak paka le aur isme doodh aur cheene dalkar dheeme aanch par 2-3 whistle aane de.

Ghee me Gajar, Ilayachee bhun kar doodh aur Cheene dale aur dheeme anch par 3 whistle aane de.

Step3. Mishran ko ek kadai me shift kar le aur gajar ko maish kar le aur tez aanch par lagatar chalate hue iska pani sukne de.

Mishran ko kadai me shift kare aur gajar ko thoda maish kar ke pani sukha le.

Step4. Ab is halwe me 2 tablespoon ghee aur malai add kare aur bhunne de.

Gajar ke Halwe me ghee aur malai dalkar bhun le.

Step5. Ek pan me half litre doodh ka (vinegar dalkar) chhaina (paneer) bana le aur halwe me add kare.

Half litre doodh ka chhaina banakar halwe me add kare.

Step6. Ab gajar ke halwe me roasted dry fruits aur thoda ghee dalkar bhun le.

Halwe me roasted nuts dale aur thoda ghee dalkar bhun le.

Step7. Taiyar gajar ke halwe ko nuts se garnish kare aur garma-garam serve kare.

Taiyar halwe ko bowl me shift kare aur nuts dalkar serve kare.

  1. Gajar ka halwa banane ke liye ekdum fresh, lal aur meethi gajar ka hi prayog kare.
  2. Gajar ke halwe me full cream mik ka prayog kare, jisse yeh ekdum creamy aur soft banega.
  3. Halwe ko lagatar chalate hue medium aanch par banaye. 
  4. Superb taste ke liye halwe me ghee ki matra thodi jyada dale.
